Quick Lemon Rice Soup 1 sm Onion or 3 scallions; chopped
3 c Fresh kale; chopped
1/2 ts Garlic powder
1/8 ts Black pepper
1/8 ts Tumeric
1/3 c Vegetable broth
3 c Pre-cooked rice
8 c Water or vegetable broth
1/4 c Lemon juice
1 c Nutritional yeast
1 tb Tamari or soy sauce
In a large pot, saute onion, kale, and seasonings in 1/3 c vegetable broth over medium heat for 5 minutes. Add remaining ingredients and simmer for 10 minutes longer. Serve warm.
