Quick and Classy Shrimp

1 can (10 oz.) condensed cream of Shrimp soup
2 Tbsp. sharp cheddar pasteurized process cheese spread or sharp grated cheddar cheese
2 Tbsp. margarine
1 Tbsp. prepared mustard
1 tsp. grated fresh lemon rind
1 (10 oz.) frozen peas
1/2 lb. cooked Shrimp, fresh or frozen
Cooked rice

In a 2 quart casserole combine soup, cheese spread, margarine, mustard and freshly grated lemon rind. Stir well. Add frozen peas. Cover and cook in microwave on high for 6 minutes, stirring after 3 minutes. Add Shrimp, continue cooking on high, uncovered for 6 minutes, stirring after 3 minutes. Serve over rice.
